Dollies provide that smooth movement that travels along side a moving object - a bit different than a zoom - in fact - dollies generally don't use a zoom - they have a fixed focal length.  Two people talking as they are walking along a path could well be a fine use of a dolly.  Of course this could be done with a steadicam
